deeply furrowed, and remarkably solid, of a dark red or purplish hue where exposed, and rose-colored where partially blanched; but the perfectly blanched portion is pure white, more so than the blanched part of the White varieties of Celery. It is also crisp, of excellent flavor, and unquestioaably the best variety of Red Celery.
